Today was supposed to be a waffle wednesday. But it didn't happen.
Ok, ok, I'm a little bitter about it not happening, but I have to admit that I had pretty fantastic meal anyways: scrambled eggs, sausages and hash browns.
You can tell I was feeling sorry for myself...because I ate all five of those lovely sausages!
The meal was easy to make, the sausages were re-heated, and the hash browns were just grated pre-cooked potatoes fried with salt, butter and garlic powder. The scrambled eggs were the crowning glory.
Simple to Spectacular will always be a well loved book of mine, because it was where I found this fantastic recipe:
5 eggs
1 1/2 tablespoons of butter
salt and pepper to taste
Mix all of the ingredients in a fry pan a cook at medium-high heat whisking constantly, but not whipping the eggs. If the eggs stick to the bottom of the pan, take the pan off of the heat, whisk until the eggs "unstick" and then replace on the heat.
The eggs will clump like curds as they cook, and when they have a consistency like oatmeal you will know that they are done (8-10 minutes cooking time). DO NOT OVERCOOK!
